The Source Defines the Mineral Profile

All salt comes from the sea, but how it is harvested dictates its flavor and mineral content.

  • Solar Evaporated Sea Salt (The Pure Standard)

Sourced from pristine ocean waters and naturally evaporated by the sun and wind, our Pure Sea Salt retains a clean, crisp salinity. Unlike mined table salt, which is stripped of character, this process captures the essence of the ocean without the bitter aftertaste of processing agents.

  • Mineral-Rich Clay Ponds (The French Tradition)

In the Guérande region of France, salt is harvested from ancient clay-lined ponds. The crystals absorb minerals from the clay, giving French Grey Sea Salt (Sel Gris) its distinctive color and moisture-rich texture. It is a bold, mineral-heavy salt ideal for cooking.

  • Ancient Sea Beds (The Himalayan Harvest)

Mined from pristine sea beds deep within the Himalayan foothills, Sherpa Pink® Himalayan Salt crystallized long before modern pollutants existed. Its pink hue comes from 84 naturally occurring trace minerals, including iron and magnesium.

Geometry

The Science of Grain Size

In the Flavor Lab, we talk about "granulometry"—the measurement of grain size. The shape of the crystal determines how it dissolves, how it sticks to food, and how it tastes.

  • Fine Grain (The Dissolver): Formulated for rapid dissolution. This is your baking grain. It melts seamlessly into doughs, batters, and sauces, ensuring even seasoning without hot spots.
  • Coarse Grain (The Grinder): Large, dense crystals calibrated specifically for ceramic salt mills. They are also heavy enough to create a salt crust on roasted vegetables or to be used in wet brines where volume matters.
  • Kosher Flake (The Adherer): A chef's favorite. These crystals are structurally flat and wide. This unique geometry allows them to adhere beautifully to the surface of meat, drawing out moisture for a perfect sear. The shape also provides tactile feedback, allowing you to pinch and control the salt with precision.
  • Pyramid Flake (The Finisher): Found in our Cyprus Flake Salt. These are hollow, 3D pyramids formed by solar evaporation. They are extremely fragile and shatter on the tongue, providing a delicate crunch. These are strictly for finishing—never cooking.
Smoke & Flavor

Authentic Process vs. Artificial Shortcuts

There is a massive difference between "Smoke Flavor" and "Smoked Salt."

The Cold-Smoking Standard: We do not use liquid smoke or artificial sprays. We use a multi-day Cold-Smoking process. By keeping the temperature cool, we prevent the salt crystals from degrading while they absorb the authentic aroma of real, untreated wood logs.

Hickory: Bold, bacon-like, and aggressive.

Applewood: Sweet, fruity, and mild.

Cherrywood: Rich, smooth, and mahogany-colored.

Alderwood: Delicate, earthy, and slightly sweet.

Artisan Fusion (The Organic Standard): Our Artisan Salt Blends (like Organic Smoky Bacon and Chili Lime) use USDA Organic ingredients. We blend real ingredients like sun-ripened chilies, organic garlic, and herbs directly with the salt.

Validated Quality

The Clean Label Promise

The final variable in gourmet salt is trust. If you turn around a bottle of generic seasoning, you will often find Silicon Dioxide, Yellow Prussiate of Soda, or Maltodextrin.

We adhere to a strict Clean Label Promise:

  • Zero Anti-Caking Agents

We never use chemical flow agents.

  • Kosher Certified

Our salts meet strict dietary and technical compliance standards.

  • SQF Quality Code Certified Facility

Our salts are third-party tested, metal detected in-house, and packaged in our SQF Quality Code Certified Facility.

Frequently Asked Questions

What is the difference between Sea Salt and Table Salt?

Table salt is highly processed, stripped of minerals, and iodized. Pure Sea Salt is naturally evaporated, retaining its trace minerals and clean flavor without bitter additives.

Why shouldn't I cook with finishing salt?

Finishing salts like Fleur de Sel or Cyprus Flake have delicate structures. High heat melts them instantly, destroying the unique texture you paid for. Always sprinkle them after cooking.

Does salt expire?

Pure salt is a mineral and does not expire. However, infused salts or blends with organic herbs (like Garlic or Truffle) are best used within a year for maximum potency.
