    Both come from the Guérande marshes of Brittany, France, but they're harvested differently. Fleur de Sel forms on the surface of the water and is hand-skimmed before it sinks, it's delicate, moist, and best used as a finishing salt. Sel Gris crystallizes on the clay floor and is raked from the bottom, it's moister, grainier, more mineral-forward, and better suited for cooking and brining. Fleur de Sel is the more premium finish; Sel Gris is the workhorse.

    Coarse is large, moist, and irregular, best for brining, salt crusts, and applications where the grain needs to hold its structure. Fine is a smaller, more workable grain that dissolves faster, better for everyday cooking, finishing, and blending. Both carry the same Guérande mineral character.

    They're very similar, both are unrefined, grey, moist salts harvested from the clay-bottom tidal marshes of the French Atlantic coast. 'Celtic salt' is a marketing term; 'Sel Gris' and 'Grey Sea Salt' are the traditional names.
