It forms only when specific weather conditions align: low wind, warm sun, low humidity. The salt crystallizes on the water's surface and must be skimmed by hand before it sinks to the clay bottom (where it would become Sel Gris instead). The yield is small, the conditions are unpredictable, and the harvest is entirely manual.

    Both come from the Guérande salt marshes of Brittany, France, but they're harvested differently. Fleur de Sel is skimmed from the water's surface by hand; it's delicate, moist, and has a faint floral complexity. French Grey (Sel Gris) is raked from the clay bottom of the marsh; it's coarser, moister, and more mineral-forward with a grey color from the clay. Fleur de Sel is the finishing salt; Sel Gris is the workhorse.

    Finishing only. This is not a compromise, it's how this salt is meant to be used. Heat evaporates the subtle marine aroma and collapses the delicate crystal structure that gives Fleur de Sel its characteristic texture. Adding it to a cooking liquid or hot pan wastes what makes it special.

    Our Fleur de Sel is harvested from the Guérande salt marshes in Brittany, on the Atlantic coast of France. Guérande is the historically definitive region for Fleur de Sel and Sel Gris production, the same marshes that have been harvested by paludiers (salt workers) for over a thousand years.

    Less than you think. A single small pinch, 3 to 5 crystals, is usually enough to finish a portion of fish or a plate of vegetables. For a steak, a slightly larger pinch distributed over the surface after resting. For desserts, a few crystals carefully placed on top. Fleur de Sel is high-impact at low volumes.
