All three have the same Himalayan source; the difference is purely in the grind.

Use Extra Fine for baking. It measures like table salt, 1:1 substitution, and distributes evenly through batters and doughs. Fine works too, but may leave slightly visible crystals in delicate pastry. Coarse is not recommended for baking.

You should always select our Coarse Grain for a refillable salt mill or grinder. The larger, dense crystals are perfectly sized to be caught by the grinder mechanism. Using fine or extra-fine grain in a grinder will simply pour straight through without grinding.
